Gb is a black key on the piano. Another name for Gb is F#, which has the same note pitch / sound, which means that the two note names are enharmonic to each other. It is called flat because it is 1 half-tone(s) / semitone(s) down from the white note after which is is named – note G. The next note up from Gb is G.
It is 1/4”. In Europe they translate that to millimetres which is 6.35mm, but not everyone translates it accurately. Some round down to 6.3mm others round up to 6.5mm. But it’s all the same jack.

A typical action on an acoustic guitar is at around 5/64″ (2.0mm) on the high E string and 7/64″ (2.8mm) on the low E string.
